Red Lentil Sloppy Joes

Can we talk about delicious and satisfying for a second? These Red Lentil Sloppy Joes hit the spot and they are sure to be a hit with your family and friends, vegan or not!

This mixture is also DELICIOUS over bakes potatoes, oil free fries, on top of a bed of greens, etc. The sky’s the limit, so feel free to eat it any way you’d like.

Ingredients: Makes 4-6 servings

  • 1 small onion

  • 1 green bell pepper

  • 3 or 4 cloves of garlic

  • 1 cup of red lentils

  • 1 cup water

  • 1 cup of veggie broth

  • 8 oz tomato sauce

  • 6 oz tomato paste

  • 1 tsp Worcestershire sauce

  • 2 TBSP brown sugar

  • 1 tsp Chili Powder

  • 1 tsp yellow mustard

  • 1 TBSP Apple Cider Vinegar

Instructions

  • Chop onion, green pepper and garlic by hand, or throw it all in a food processor.

  • Saute veggie in an Instant Pot or on the stove. Use water or veggie broth to saute - no oil.

  • Add in the rest of the ingredients.

  • If using an Instant Pot, cover with the lid, set to pressure cook for 15 minutes. When the timer stops, do manual release.

  • If cooking on the stove, cook for 20 minutes or until the lentils are soft. Stir constantly to make sure the lentils don’t stick to the bottom.

  • For weight loss, I recommend serving it on ezekial bread. You can also top a potato, serve with rice, or eat it alone. Enjoy!

  • If you are not trying to lose weight, enjoy on a vegan hamburger bun and enjoy!
