Sweet Potato Heaven

Holy Sweet Potato! This is such a delicious meal. Have it for breakfast, lunch, dinner, dessert…the Sky’s the limit. Not only is this delicious, it’s super easy to make and takes minutes.

Ingredients: Makes 1 serving

  • 1 sweet potato (cook before hand and store in the fridge for fast preparation)

  • 1 banana

  • 1 TBSP PB2

  • 1/2 TSP peanut butter (or another nut butter)

  • 1 TSP Ground Flax Seeds

Instructions

  • If you don’t have a sweet potato, already cooked and store in the fridge, cook your sweet potato

  • If you do have a sweet potato in the fridge, pop it in the microwave to warm

  • Slice your banana, cut open the sweet potato and place the banana on top

  • Take PB2 and peanut butter, and mix in a bowl with a splash of water to make a “Sauce.”

  • Drizzle the peanut butter on the potato

  • Sprinkle the ground flax seeds on the potato

    Serve and enjoy!
