Low-Fat Peanut Rice Noodles

Ingredients: Makes 1 Serving

  • Thin rice noodles

  • One chopped red bell pepper

  • 1 C chopped cucumber

  • 1 C shredded carrots (buy already shredded if possible)

  • 1/2 C shelled edamame (I buy frozen and defrosted)

  • 1 C shredded red cabbage (even though it’s purple, lol)

    Sauce/Dressing

  • 1/4 c water

  • Juice from 1/2 lemon

  • 2 tbsp maple syrup,

  • 1 tbsp tahini,

  • 1/3 c PB2 powder,

  • 2 tbsp low sodium soy sauce

Instructions:

  • Mix ingredients for the sauce

  • Cook noodles according to the instructions

  • While the noodles are cooking, prepare the veggies

  • Put everything in a bowl and top it with sauce
