5 Minute Weight Loss Meal

I say this all the time, but this really is one of the easiest meals I’ve ever made. It literally takes 5 minutes to make, tastes delicious and fills my stomach for hours on end. Not to mention there is almost zero clean up and that’s great for someone like me, who doesn’t have a full working kitchen right now. Remodel almost over…woohoo! Ingredients: Makes 1 Serving

  • 1 container of butter lettuce

  • 1/2 c canned or already soaked chickpeas, rinsed

  • 1/2 c - 1 c white or brown rice

  • 3-4 Persian cucumbers sliced

  • Everything But The Bagel Seasoning - as much as you’d like

  • A few dashes of nutritional Yeast

  • Sauce/Dressing (1 tbsp tahini, 2 cap fulls of low sodium soy sauce, water to thin)

Instructions:

  • Add chickpeas, rice, and cucumbers to the butter lettuce container. Add EBTB seasoning and nutritional yeast. Top with sauce/dressing. Add the lid back to the salad container and shake vigorously. Enjoy!
