One Bite Chocolate Cups

These are so chocolaty and a perfect little treat with out going overboard. I love to make these once a week to have on hand for when I have a sweet tooth and don’t feel like having my typical go-to, fruit.

These are also great for the little ones in the family. My kids love to have a few of these after lunch or dinner and I don’t feel guilty letting them eat them. They are made with real, minimal ingredients, and sure as hell beat the heck out of any prepackage sweet thing I’d bring home from the store.

To make these one-bite chocolate cups I used a mini silicone cup set. If you don’t have one, this recipe will work with regular size muffin pans and would make probably around 6 -8 muffins. If you would like to buy the mini silicone cup set, you can get it here.

Ingredients: Makes 20-24

  • 1/2 C of whole wheat flour (almond and coconut work just as well).

  • 1/4 C Brown Sugar

  • 1/4 C Unsweet Cocoa Powder

  • 1 TSP Baking Powder

  • 1/4 C Chocolate Chips

  • 2 tsp Vanilla

  • 1/2 C Unsweet Plant Milk (I use vanilla almond)

  • 1/4 C Apple Sauce

Instructions:

  • Mix dry ingredients together well.

  • Add the vanilla, plant milk and apple sauce to the dry mixture.

  • Mix together well until you don’t see any dry parts

  • Scoop out the batter and place in the individual mini cupcake molds.

  • Bake at 350 degrees for 15 minutes
