Black Eyed Peas Oil Free & Low Fat

HAPPY NEW YEAR and hello 2021! I can’t say there has ever been a year I was so excited to start than this one. And what better way to welcome 2021 than with a yummy bowl of deliciousness…and by deliciousness, I mean black eyed peas.

This meal is filling, hearty, fast and easy to make and it’s sure to be on repeat every year!

Ingredients: Makes 6-8 servings

  • 5 cans of black eyed peas, or already cooked peas (about 75-78 ounces)

  • Veggie broth (I used almost 32 ounce)

  • 1 large onion, chopped

  • 2 bell peppers (I used one red and one green), chopped

  • 4-6 cloves of garlic, minced

  • 1-2 TBSP Thyme

  • sea salt to taste

  • 1-2 TBSP Cajun/creole seasoning - optional, but it’s good! (I use Tony Chacharie’s).

  • 1-2 TBSP of smoked paprika

  • Vegan sausage - optional (I used Gardein Italian sausage)

  • Rice

Instructions: Stove Top

  • Saute onion and bell peppers on the stove in veggie broth until soft.

  • Add garlic and saute for another 3 minutes.

  • Add peas and mix well.

  • Add just enough veggie broth until its almost covering the peas. You don’t want to fully submerge them in broth.

  • Add spices and mix well.

  • Bring to a boil, then cover and let simmer for 30 minutes or until creamy.

  • Turn fore off and let sit for 10 minutes to thicken up more.

  • Serve over rice and enjoy!
