Healthy Pumpkin Blondies

The Healthy pumpkin blondies are not only delicious, but they are also dairy-free, oil-free, animal-free, and gluten-free (use flour of choice). They take only 20 minutes to make and have about 120 calories each. I hope you enjoy them as much as we do!

Ingredients: Makes about 8 blondies

  • 1/2 cup of pumpkin puree

  • 1 flax egg (1 tbsp ground flax seed and 3 tbsp water. Let sit for 10 mins)

  • 1/4 cup PB2 powder mixed with water. You want a runny consistency.

    You can also use 1/4 cup of regular peanut butter instead, but the calories will be more per blondie.

  • 1/4 cup maple syrup

  • 1 cup of gluten-free flour - oat or almond.

    You can also use whole wheat if you don’t need these to be gluten free

  • 1/2 tsp baking powder

  • 1/2 tsp cinnamon

  • 3 tbsp vegan chocolate chips

Directions:

  • Mix all ingredients, leaving out the chocolate chips

  • Add to a non-stick loaf pan or line with parchment paper if you don’t have a non-stick pan.

  • Top with vegan chocolate chips

  • Bake at 350 degrees for 20 mins
