Chickpea Chopped Salad

This salad is mind-blowingly delishious!  The key to an amazing salad (in my opinion) is having all the pieces the perfect bite size…including the lettuce!  The key “ingredient” here is the FULLSTAR chopper I use. This brand is key! I’ve had two other horrible ones, but this one’s on the money.  Click here to get the chopper.

Ingredients: Makes 1-2 Servings

  • Cucumber

  • Carrots

  • Tomato

  • Any lettuce

  • Rice (I use about 1 cup)

  • Chickpeas (I use about 1/2 cup)

  • Everything but the bagel seasoning

  • Low-sodium soy sauce

  • Tahini

  • Apple cider vinegar.

  • Nutritional yeast.

  • Sriracha

Directions:

  • Chopp all veggies with the chopper

  • Defrost or cook rice. I get frozen rice and keep it in my refrigerator always.

  • Make the dressing: Mix 2 tbsp low sodium soy sauce, 1-2 tbsp tahini, and a capful of apple cider vinegar. I also added a little sriracha and about 2 tbsp of nutritional yeast. Use water to thin out the dressing if it is too strong or thick.

Full On Plants is about eating in a way that keeps you full, fuels your body, and supports your health—fully.

This is where simple, satisfying, whole food plant-based meals meet real results. No calorie counting, no restriction—just feel-good food that fills your belly and supports long-term wellness.

I started this journey after losing 50 pounds by doing the opposite of what most diets teach—I ate more food, not less. And I kept it off by focusing on meals that are fast, flavorful, and packed with the power of plants.

Full On doesn’t just mean full and satisfied—it also means we’re all in on living well, eating better, and making this lifestyle doable for real life.

Whether you’re just getting started or ready to stay consistent, Full On Plants makes plant-based eating simple, sustainable, and energizing—so you can thrive without overthinking it.

Because food should fuel your body, fill your belly, and support your health.

And plants? They do all three.
