Dill Pickle Chickpea Salad

Ingredients: Makes about 4 servings

  • 1 can chickpeas

  • 4 -6 baby dill pickles, this depends on how much dill you want - the more the merrier I say!

  • 1 small avocado

  • 2 tbsp vegan oil-free mayo

  • 1 tbsp Dijon mustard

  • 1 small handful of fresh dill

  • 1/2 shallot

  • Bread of choice toasted

Directions:

  • Chop all ingredients together and mix well

  • Serve on your favorite toast of choice and enjoy!
