Oil Free Crunchy Tacos


Ingredients: Makes about 3 tacos

  • Oil-free corn tortillas.

    I use the brand Mi Ranchero and I buy the thin version since they are only 35/40 calories each. I get mine at Whole Foods.

  • Oil-free refried beans.

    I love to use Right Foods Black Bean lime soup. If you let it sit, it makes a thick refried black bean consistency, and its delish. You can buy them at Whole Foods or Amazon here

  • 1/4 avocado

  • Corn - as much as you want

  • Oil-free vegan cheese sauce.

    You can use mine here, or you can buy some at the store. They are quite a few nowadays.

Directions:

  • Warm the tortillas in the microwave to soften them up for about 15 seconds.

  • Lightly fill the tortillas with beans, corn, and avocado. You don’t want to stuff it as it will all fall out.

  • Gently fold the tortilla in half. making a taco and press down carefully so it sticks together.

  • Place in an air fryer at 375 degrees for 5-10 mins. Make sure to carefully flip the tacos every few minutes.

  • Top or dip in vegan cheese sauce.
