Cookie Dough Bark (low fat)

Ingredients: 1 serving

  • 1 can of drained chickpeas

  • 4 TBSP maple syrup

  • Splash of light coconut milk (optional, but does make it creamier)

  • 1/8 cup PB2 (mixed with water to make a paste)

  • 1/8 cup of nut butter (we did peanut butter)

  • 1/4 tsp cinnamon

  • 1/4 cup vegan chocolate chips

  • 1 cup oat flour

    Chocolate sauce:

  • 1/4 cup unsweet cocoa powder

  • 2-3 tbsp maple syrup

Directions:

  • Blend everything (minus the chocolate chips and oat flour) until it’s completely smooth.

  • Add the oat flour and chocolate chips to a bowl.

  • Make chocolate sauce - add cocoa powder & maple syrup to bowl and stir until smooth - you may have to add more syrup or water if you prefer

  • Lay cookie dough on parchment paper and flatten into a big rectangle

  • Pour the chocolate sauce on top and smooth

  • Freeze until set and cut into 12 squares
