10-minute Taco Bowl

Ingredients: 1 serving

  • Your favorite frozen non-starchy veggies

  • Frozen Rice (don’t have any? Freeze your own on the weekends)

  • Black beans

  • Frozen corn

  • Shredded lettuce

  • I - 2 tbsp salsa

  • 1-2 tbsp your favorite vegan queso (I love Credo or you can make mine, just google healthy vegan mamas cheese sauce)

    Optional Add-Ins:

    • A squeeze of lime for brightness

    • Chili flakes for heat

    • Fresh herbs like cilantro or green onions

Directions:

  • Throw it all in a pot (minus lettuce and queso)

  • Add lettuce to a bowl

  • Add rice, beans, and veggies

  • Top with vegan queso
