Chickpea + Sweet Potato Sheet Pan Meal

Ingredients: Option 1 (450 calorie version)

  • 1 can of rinsed and drained chickpeas

  • 2 medium sweet potatoes, cubed

  • 1 red onion sliced

  • Broccoli Florets

  • Minced garlic, about 1 tbsp (cooked in a jar), or garlic powder

  • Smoked paprika, 1-2 tbsp

  • Italian seasoning, 1-2 tbsp

  • Everything Bagel Seasoning, as much as you want (I get the low-sodium kind)

  • Nutritional yeast, about 1/4 cup

  • Salt and pepper to taste

Directions:

  • Put all ingredients into a large mixing bowl

  • Mix well

  • Place on a large non stick baking sheet. If you don’t have one, line your baking sheet with parchment paper.

  • Bake at 425 degrees for 30-35 minutes

  • Serve with rice, in a burrito, or in a salad. Enjoy!
