Chickpea + Sweet Potato Sheet Pan Meal
Ingredients: Option 1 (450 calorie version)
1 can of rinsed and drained chickpeas
2 medium sweet potatoes, cubed
1 red onion sliced
Broccoli Florets
Minced garlic, about 1 tbsp (cooked in a jar), or garlic powder
Smoked paprika, 1-2 tbsp
Italian seasoning, 1-2 tbsp
Everything Bagel Seasoning, as much as you want (I get the low-sodium kind)
Nutritional yeast, about 1/4 cup
Salt and pepper to taste
Directions:
Put all ingredients into a large mixing bowl
Mix well
Place on a large non stick baking sheet. If you don’t have one, line your baking sheet with parchment paper.
Bake at 425 degrees for 30-35 minutes
Serve with rice, in a burrito, or in a salad. Enjoy!
