Southwest Burrito Bowl

Ingredients: Makes 1-2 Servings

  • 1 cup canned and rinsed black beans

  • 1 cup corn (I use frozen and defrost it)

  • 1 cup of brown or white rice (I use frozen and defrost it)

  • A handful of cherry tomatoes, sliced

  • 1/2 avocado sliced

    Southwest sauce: (One of 30+ sauces in my popular sauce recipe ebook, Saucy Vegan Mama)

  • 1/2 C cashews

  • 1 TBSP tahini

  • 1/2 TSP maple Syrup

  • 1 TSP garlic powder

  • 1/2 TSP onion powder

  • 2 TSP apple cider vinegar

  • 1 TSP smoked paprika

  • 1 TSP salt

  • 3/4 C water

  • Mix together in high speed blender

Directions:

  • Defrost or cook rice, corn, and black beans. Because I use frozen corn and rice and canned black beans, I put it all in a bowl and heat for 3 minutes.

  • Top with tomatoes and avocado

  • Drizzle the southwest sauce on top

  • Add salt as needed
