Sheet Pan Fajitas

Ingredients: Makes 2 Servings

  • 3 oil free corn tortillas

  • 1 chopped zuchinni

  • 1/2 red onion sliced

  • 2 bell peppers sliced any color

  • 1 can rinsed and drained chickpeas

  • Optional 1/2 avocado for topping

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tbsp chili powder

  • salt and pepper to taste

  • Instructions:

  • Place everything on a sheet pan

  • Sprinkle with spices. You may need more or less depending on how you like the flavor.

  • Bake in oven at 350 degrees for 15-20 mins

  • Warm corn tortillas and build your fajitas

  • Drizzle with southwest sauce

  • Optional avocado for toppings

    Southwest sauce

  • 1/2 C Cashews

  • 1 TBSP Tahini

  • 1/2 TSP Garlic Powder

  • 1/2 TSP Onion Powder

  • 2 TSP ACV

  • 1/2 TSP Maple Syrup

  • 1 TSP Smoked Paprika

  • 1 TSP Salt

  • 3/4 C Water
