Not Fried, Fried Rice

This oil free dish is a favorite around here, especially with the kids. It is easy to make and full of flavor. I like to use shelled edamame and carrots when I making this for the entire family, but when it’s just for me, I throw all kinds of other veggies in there. So feel free to add as many or as little variety of veggies as you want, the sky’s the limit.

Ingredients: Makes 1 - 2 servings

  • 1/4 onion

  • 3 garlic cloves minced

  • 1/4 tsp minced ginger

  • 2/3 cups of shelled edamame - I buy frozen

  • 1 shredded carrot

  • Brown or White rice

  • Low sodium soy sauce

  • Veggie broth for sauteeing

Instructions: Stove Top

  • Saute veggies in veggie broth until soft. Add more broth as needed

  • Add in rice, soy sauce and stir well.

    Serve and Enjoy!
