Mayo and Oil Free Potato Salad

Potato Salad that's great for weight-loss! Woohoo!


You guys...omg this is the best! I eat potatoes all the time, but wanted to mix it up and make a potato salad that was low fat, satisfying and actually healthy for me. For the base I used my yummy salad dressing (or sauce) instead of a typical vegan mayo and let me say - wow! The entire family was dying over this salad! I ate that entire bowl you see pictured above and it kept me full all day long.

Ingredients: Makes about 1-2 servings

  • 1 bag of mini yellow potatoes, cooked and quartered. (I popped mine in the instant pot for 8 min and voila!)

  • 1 tbsp onion powder

  • 1 tbsp garlic powder

  • Hungry Vegan Mama's salad dressing (click here for recipe)

  • 1-2 tbsp of Chopped fresh parsley

Instructions:

  • Mix all the ingredients together gently in a bowl.

  • Place in the refrigerator for 30 minutes - 1 hour.

  • Serve and enjoy!
