Korean Potato Lettuce Boats

If you like potatoes, this dish is sure to get you coming back for more! It’s easy, filling and super fast to make.

Ingredients: Makes 1-2 servings

  • 1 bag of mini yellow potatoes

  • 3 TBSP light soy sauce

  • 1 TBSP maple syrup

  • 1/4 cup of water

  • Romaine Lettuce

Instructions

  1. Cook the potatoes. I love to pop them in my instant pot for 10 minutes. You can also boil them in a pot until soft. Drain and set aside to cool.

  2. Once cool, slice the mini potatoes in half.

  3. Place potatoes in a pan and add soy sauce, maple syrup and water. Cook until the sauce becomes thick and the potatoes absorb it.

  4. Serve on romain lettuce.
