Edamame Crunch Salad

Ingredients: Makes about 2-3 servings

  • 2 cups edamame, shelled (I get frozen)

  • 1 cup of brow rice 9I get frozen)

  • Shredded salad mix (I like with purple cabbage and carrots)

  • 2 chopped Persian cucumbers

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • A small amount of chopped peanuts, green onions, and cilantro for toppings

  • Dressing ( 1/4 cup of low sodium soy sauce, juice of one lime, 1/2 cup pb2 powder - or real peanut butter - 2 tbsp rice wine vinegar, 1 tbsp maple syrup, water until a thin consistency.

Directions:

  • Defrost frozen rice and edamame

  • Chop salad and cucumbers

  • Add everything to a large bowl and top with cilantro, green onions, and peanuts.

  • Top with dressing and enjoy
