Delicious Lentil Shepherd’s Pie

Ingredients: Makes about 12 servings

  • 1/2 cups green lentils

  • 1 large yellow onion

  • 3 carrots chopped

  • 1.5 cups of peas

  • 1.5 cups of corn

  • 2 tbsp soy sauce

  • 2 tsp liquid smoke

  • 1 tsp all spice

  • 1 tsp cumin

  • 1/3 can of fire roasted dice tomatoes

  • 6-7 Yukon gold potatoes

  • 1/3 cup light coconut milk

  • 1/4 cup Nutritional yeast

    Instructions

  • Sauté onions in water or veggie broth. Low fire so you can caramelize them. Usually takes 20-30 mins

  • In separate pan sauté carrots, peas and corn in veggie broth or water.

  • Continue until carrots are soft. -while you sauté, cook lentils until soft. I used an instant pot. Took 10 minutes.

  • Add all ingredients together (including liquid smoke, soy sauce, spices and tomatoes)

  • Peel potatoes and quarter. Boil in water until soft. I used an insta pot and cooked them for 8 mins.

  • Placed cooked potatoes in a bowl, add light coconut milk (less or more depending on how thick you want them), and nutritional yeast. Mash together with potato masher.

  • Layer dish with lentil mixture and top with mashed potatoes. Pop in the oven at 350 degrees for 15-20 mins.
